My kids love to make these cookies at Christmas and decorate them.

If you want them to be soft, take them out of the oven right before they appear done.

1 cup white sugar
3/4 cup butter, softened
2 large eggs
1/2 teaspoon vanilla extract
2.5 cups all-purpose flour
1 teaspoon baking powder

Steps

In a large bowl, cream together the softened butter and white sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Gather the dough, wrap it in plastic wrap, and chill it in the refrigerator for at least 1 hour.
Preheat your oven to 400 degrees F (200 degrees C).
On a lightly floured surface, roll out the chilled dough to your desired thickness and cut into shapes.
Place the cut cookies onto ungreased baking sheets.
Bake in the preheated oven for 6-8 minutes, or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
